Wine service training that helps

BIIAB is working with the Academy of Food and Wine Service (AFWS) to develop a range of qualifications based on the AFWS Licence to Work® Programme. Aimed at front of house staff, the areas covered by the programme are as relevant to pubs as they are to the restaurant and hotel sector and nowhere is this more evident than in wine service.
The first qualification under development is the BIIAB Level 1 Award in Wine Service (AWS), which is due to be launched shortly. This will aim to instil confidence in staff by giving them the knowledge they need to make recommendations and to provide a superlative level of customer service that will encourage repeat business.
The qualification covers key areas such as wine styles and grape varieties; basic wine tasting techniques; opening, decanting and pouring wine; the characteristics and maintenance of glassware; the basic principles of food matching; and the maximisation of both food and wine sales. It is available through BIIAB-approved centres which have been trained by the AFWS.

Even in this economic climate, customers are happy to pay a little bit more for a quality offering, served with knowledge and professionalism, so improving wine service in pubs can only be good for the bottom line.’
