Cook up a storm with Catering Qualifications
You really want to offer food in your pub or to improve the catering that you currently offer, but are not sure of the best way to do this. And paying for a qualified chef is beyond your budget.
One way would be to train your existing staff. But many catering courses are a year or more in length and involve staff taking a lot of time out of the business, so this option can be economically unviable.
The answer may well be the portfolio of catering qualifications available from BIIAB, which has developed with an industry steering group. The three qualifications in the suite have been tailored to the needs of licensed hospitality businesses. Emphasis is placed on the essential skills and knowledge required to work in and manage a kitchen in licensed hospitality premises. And each qualification can be delivered with minimal time spent out of the business over the three months that it would take to achieve the whole portfolio.
The three qualifications are:
- BIIAB Level 1 Award in Essentials of Catering (AEC)
- BIIAB Level 2 Award in Cooking Theory and Practice (ACTP)
- BIIAB Level 3 Award in Kitchen Management (AKM)
The AEC and ACTP cover all aspects of commercial catering:food safety in catering; raw food preparation processes; sandwich making and food presentation; principal cooking methods; how to buy, prepare and cook various foods; sauce and soup making; plus team working in the kitchen and the basics of menu planning.
The final qualification, the AKM, is designed for managers and covers all the areas that need to be considered when running a commercial kitchen including the planning and management of human resources; dealing with all administrative matters such as stock control and temperature recording; costing food and calculating profits; undertaking HACCP risk assessments and dealing with environmental health; and how to apply marketing principles and promotion tools to generate business success.
